Elderberries are rich in Iron, Phosphorus, Vitamin A, Vitamin B6, and Vitamin C (Janick, 2007) among other nutrients and antioxidants. Various elderberry extracts have been shown to inhibit influenza A and B viral binding to cells, decrease sickness duration due to influenza (Zakay-Rones, 1995), and decrease Cold symptom severity and duration (Tiralongo, 2016).

Many elderberries in the marketplace are dehydrated and come from European Elderberries from Europe.
Utilizing fresh frozen elderberries means that our berries have never been exposed to the potentially antioxidant degrading process of dehydration. By freezing our elderberries as quickly as possible after cutting and destemming them, we are working to provide the freshest, highest quality elderberries on the market.
American Black Elderberries have been shown to have additional types of polyphenols and anthocyanins (antioxidants) and of total anthocyanins versus European Elderberry. Also, a majority (>60%) of anthocyanins in American Elderberry are acylated (meaning they are more stable through the cooking process and will have higher shelf stability) whereas European Elderberry possesses no acylated anthocyanins (Lee, 2007).
